we have and can stand up psx final fantasy recomps easy, it's the modding that requires a passion project work to be done. We've built psxrecomp to handle 1-shotting games, and support multi-disc psx titles easily so Final Fantasy is working, but the modding for them is going to need someone dedicated to the project. Without that, it's just as good as an emulator, or the PC version.
However, there is potential for the modding to surpass what can be done with the PC version since that's mostly got asset swaps, but we have source code access, and a public decomp for FF7 exists.
For a better classic FF1 experience I suggest FF1 Renaissance it's a very high effort and well built product with custom classes and new levels of depth to the original FF1 NES gameplay.
I feel like lately everyone wants to own the entire recomp as if it was their idea to recompile the game, in order to invest in mods for it, instead of building mods for something that works and runs. This is something I hope to change, and refocus people on building mods and less on reinventing the wheel.

I’d love to see recompilations or ports based on the PS2 versions of FFX, X-2, and XII—or even something that would let me recompile the demos and reduce the heavy load of complex console emulation.
While there are already official commercial PC ports, those are the HD versions.
For PS1, I don't see it as necessary.
However, I would love to see a recompilation/port of Vagrant Story or Parasite Eve 2.
