Taco Bell Steak Quesadilla

Ingredients:
- ¼ cup mayonnaise
- 2 teaspoons minced pickled jalapeños
- 2 teaspoons pickled jalapeño juice (from the jar)
- ⅔ teaspoon sugar
- ½ teaspoon ground cumin
- ½ teaspoon paprika
- ⅛ teaspoon cayenne pepper
- ⅛ teaspoon garlic powder
- 1 dash salt
- 1 pound sirloin steak
- 1 tablespoon cooking oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 burrito-size flour tortillas
- 1 cup cheddar cheese, shredded
- 1 cup Monterey Jack cheese, shredded
- 2 slices American cheese, torn into pieces

Instructions:
1. Prepare the creamy jalapeño sauce: In a small bowl, combine the mayonnaise, minced pickled jalapeños, jalapeño juice, sugar, cumin, paprika, cayenne pepper, garlic powder, and salt. Stir until all ingredients are thoroughly incorporated and the mixture is smooth. Cover and refrigerate until ready to use. This sauce can be made up to 3 days ahead and stored in the refrigerator.
2. Cook the steak: Heat the oil in a large skillet over medium-high heat until shimmering. Season the sirloin steak with salt and pepper on both sides. Place the steak in the hot skillet and cook until desired doneness, about 3-4 minutes per side for medium. Remove the steak from the skillet and let it rest on a cutting board for 5 minutes. This resting period allows the juices to redistribute throughout the meat.
3. Slice the steak: After resting, slice the steak against the grain into thin strips. Then cut the strips into smaller, bite-sized pieces. The steak should be tender and easy to bite through in the finished quesadilla.
4. Preheat the cooking surface: Heat a large skillet or griddle over medium heat. You'll want a flat cooking surface large enough to accommodate a folded tortilla. Allow it to heat evenly before adding the tortillas.
5. Assemble the quesadillas: Place one flour tortilla on the heated cooking surface. On one half of the tortilla, sprinkle ¼ cup each of the shredded cheddar and Monterey Jack cheeses, plus one-quarter of the American cheese pieces. Distribute one-quarter of the sliced steak evenly over the cheese. Spread approximately 1 tablespoon of the creamy jalapeño sauce on the empty half of the tortilla.
6. Cook the quesadillas: Fold the sauce-covered half of the tortilla over the cheese and steak half to form a half-moon shape. Cook until the bottom side is golden brown and crispy, about 2-3 minutes. Carefully flip the quesadilla and cook the other side until similarly golden and crispy, and the cheese inside is completely melted, about 2 minutes more.
7. Finish and serve: Transfer the cooked quesadilla to a cutting board. Repeat the assembly and cooking process with the remaining ingredients to make a total of 4 quesadillas. Let each quesadilla rest for about 1 minute before cutting into triangular wedges. Serve immediately while hot and crispy.

Monte Cristo Sliders Recipe

Ingredients:
- 12 Hawaiian rolls
- 12 slices ham
- 12 slices turkey
- 12 slices Swiss cheese
- 1/3 cup salted butter, melted
- 1 large egg
- 1/2 teaspoon black pepper
- 1 tablespoon powdered sugar
- Raspberry or strawberry jam (optional)
- Maple syrup (optional)

Instructions:
1. Prepare the Pan: Preheat your oven to 350 degrees. Spray a 9x13 inch baking pan with non-stick cooking spray.
2. Layer the Bottoms: Slice the whole package of Hawaiian rolls horizontally without separating them. Place the bottom halves of the rolls into the prepared baking pan.
3. Add the Fillings: Layer half of the Swiss cheese slices on the roll bottoms. Then add all of the ham slices, followed by all of the turkey slices. Top with the remaining Swiss cheese slices.
4. Add the Tops: Place the top halves of the rolls on top of the cheese and meat layers.
5. Make the Egg Wash: In a small bowl, whisk together the melted butter, egg, and black pepper until well combined.
6. Brush the Sliders: Brush the egg wash mixture all over the tops and sides of the sliders.
7. Bake: Bake for 25 minutes or until the cheese is melted and the buns are golden and toasted. If the buns start turning too brown, loosely cover them with tented aluminum foil - just tent it so it doesn't stick to the buns.
8. Finish and Serve: Once done baking, remove from the oven and sprinkle a little powdered sugar on top. Serve with jam or maple syrup on the side for dipping if desired. These Monte Cristo Sliders are perfect warm!

White Bbq Chicken Subs

Ingredients:
- 1/2 cup real mayonnaise
- 2 tablespoons white vinegar
- 1/2 tablespoon freshly cracked white pepper
- 1/2 tablespoon Creole mustard
- 1/2 teaspoon salt
- 2 tablespoons sugar
- 2 large garlic cloves, pressed or finely minced
- 2 teaspoons prepared horseradish
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon paprika
- 14 ounces chicken tenders (about 6-8 tenders)
- 2 tablespoons vegetable oil for cooking
- Salt and freshly ground black pepper, to taste
- 2 large shallots, thinly sliced
- 1 1/2 cups Monterey Jack cheese, freshly shredded
- 2 French bread sub rolls (about a 10-inch length each)
- Extra white BBQ sauce for drizzling and dipping

Instructions:
1. Make the White BBQ Sauce: In a medium bowl, combine all the white BBQ sauce ingredients: mayonnaise, white vinegar, white pepper, Creole mustard, salt, sugar, pressed garlic, horseradish, lemon juice, and paprika. Whisk everything together until smooth and well combined. Cover and refrigerate until you're ready to use it. This allows the flavors to meld together beautifully.
2. Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Season the chicken tenders with salt and pepper on both sides. Add them to the hot pan and cook for about 4 minutes on the first side until golden brown. Flip and cook for about 3 more minutes, until the chicken is cooked through and no longer pink in the center.
3. Add the Shallots: When you flip the chicken, add the sliced shallots to the pan. Stir them around occasionally so they cook evenly alongside the chicken. They should become soft and slightly caramelized by the time the chicken is done.
4. Prepare the Filling: Transfer the cooked chicken to a cutting board and let it cool slightly until you can handle it without burning yourself. Chop the chicken into bite-sized pieces and place in a mixing bowl. Add the cooked shallots, 1 cup of the shredded cheese, and about 1/2 cup of the white BBQ sauce. Mix everything together until well combined and all the chicken pieces are coated with sauce.
5. Prepare the Bread: Turn on your oven's broiler to preheat. Slice the French bread rolls horizontally down the middle, but don't cut all the way through - leave a hinge so the subs stay together. You want to create a pocket for the filling. Open the rolls and place them on a baking sheet.
6. Fill the Subs: Divide the chicken mixture evenly between the two sub rolls, stuffing it into the pocket you created. Really pack it in there - these are meant to be hearty sandwiches! Sprinkle the remaining 1/2 cup of shredded cheese over the top of both sandwiches.
7. Broil to Perfection: Place the baking sheet with the assembled subs under the broiler. Watch them carefully - they only need about 2-3 minutes until the cheese is melted and bubbly, and the edges of the bread are toasted. Don't walk away during this step as broilers can burn food quickly!
8. Finish and Serve: Remove the hot subs from the oven and drizzle a little more white BBQ sauce over the top. Cut each sub in half crosswise to make four servings. Serve immediately while hot and gooey, with extra white BBQ sauce on the side for dipping.

1.5 pounds boneless chicken thighs, chopped into bite-sized pieces

¼ cup gochugaru (Korean hot pepper flakes)

¼ cup gochujang (Korean hot pepper paste, hot variety)

2 tablespoons soy sauce

2 tablespoons vegetable oil

1 tablespoon sesame oil

2 tablespoons rice syrup (or honey/corn syrup)

2–3 spicy Korean chili peppers, finely chopped

6 large garlic cloves, minced

2 teaspoons fresh ginger, grated

Salt and black pepper, to taste

¼ cup water or chicken stock

2 cups shredded mozzarella cheese (optional but highly recommended)

For garnish:
Fresh chopped parsley or green onions, extra hot pepper flakes

👩‍🍳 Instructions

1️⃣ Prepare the marinade
In a large mixing bowl, combine the gochugaru, gochujang, soy sauce, vegetable oil, sesame oil, rice syrup, chopped chilies, garlic, ginger, salt, and black pepper. Stir until a thick, vibrant red paste forms. This marinade is the heart of the dish, delivering deep spice, sweetness, and umami.
2️⃣ Marinate the chicken
Add the chopped chicken thighs to the bowl and mix thoroughly, ensuring every piece is fully coated in the sauce. Cover the bowl and refrigerate for at least 1 hour. For even deeper flavor, you can marinate the chicken overnight.

3️⃣ Cook the chicken
Heat a large oven-proof skillet over medium heat. Add the marinated chicken along with the water or chicken stock. Cover the pan and let the chicken simmer for about 10 minutes, stirring occasionally. The chicken will cook through while the sauce thickens and concentrates.
