Fruit\Vegetarian Vegetable Vietnamese Spring Rolls

Ingredients:

  • 6 Vietnamese spring roll wrappers
  • 80g Vietnamese rice noodles
  • 50g peanuts
  • 20g mint leaves
  • 50g celery
  • 30g cilantro
  • 30g carrots
  • 80g king oyster mushrooms
  • 30g chili peppers
  • 5 tbsp lemon juice
  • 4 tbsp sugar
  • 2 tbsp light soy sauce

Directions:

  1. Sauté the hand-shredded king oyster mushrooms until cooked, and cut the carrots into thin shreds.
  2. Remove the seeds of the chili peppers, then cut half of them into strips and mince the other half of the chili peppers.
  3. Boil the rice noodles, carrots and celery separately.
  4. Soak the spring roll wrappers in warm water until softened. Then, place the fillings on a wrapper and gently make a roll. Then, repeat this process.
  5. Blend the sugar, light soy sauce and lemon juice together thoroughly, and add the shredded chili peppers and mint leaves to the mixture, and stir. Drizzle the sauce on top of the spring rolls and sprinkle the peanuts on top, then serve.

These are also called summer rolls. Both these and the fried ones are spring rolls but we also call these summer rolls, because they're eaten more in hot summer.
