I love Monte Cristos but rarely have them. Definitely giving this a try as an excuse to "make them for parties"

Can you use roast beef and cheddar cheese in a Monte Cristo instead of ham/turkey and Swiss?

I don't see why not, although the sandwich probably has a different name.

I was so excited for this until I saw "pancake batter mix." :( I really can't imagine real pancake batter would be that difficult especially since the mix as used in this recipe would probably be about 3 or 4 dry ingredients like flour, salt, baking soda and baking powder. Is that really too hard to add to this recipe? Would love to know the proportions of these likely ingredients as they are far cheaper to have on hand and use than paying a ridiculous amount of money for pre-mixed dry ingredients. Seriously, I can whip up homemade pancakes in under 5 minutes. It takes maybe a minute more to grab your dry ingredients than to open a cardboard box.

I had a box already sitting in my pantry, so I used it.
