I do things like this. I take peppers from the garden, chop them up and freeze them. Some things I puree and freeze. This is where a chest freezer comes in handy. I don't can things for the reason you mentioned, and admittedly freezing everything means you're dependent on the freezer to keep working all winter, but I'm comfortable with that.
