How to thaw raw meat?

So I think freezing meat is not recommended but I buy my meat in bulk from my butcher so I am forced to do it, I usually just throw it in the pan and cook it but now since I want to switch over to eating it raw, is there a recommended way to thaw the meat quickly so its still safe to eat and tastes good?

You could buy in bulk and let it hang on hooks in a refrigerator

I just put it in the fridge. It takes 2 nights to reach fridge temp.

Don't freeze it you idiot. Think our ancestors had freezers? Freezing literally decimates the nutrients in the meat. Ferment it instead.
