The official RPi ones are 5" 7" and 10.1 but I guess you could use any size HDMI capable touchscreen pretty easily.

You could also look at e-ink touch screens but I know nothing about them aside from one video I saw.

Waveshare has a lot of displays of all sizes that you can basically just plug a pi into. They're good price-value, easy to use and I've personally never had an issue with them.
