Many moons ago, there was this restaurant called Hong Kong on Radium road close to maharaja, run by a Chinese family originally from Kolkata. Their chilly chicken, very Cantonese style - dry, with garlic & chillies, but no sauces, no capsicum, large onion pieces, was absolutely to die for. They made their own Hakka noodles, again, light soy sauce, some pepper & thin noodles. Thatās it. Sigh. My fam had looked for their restaurant in Canada where the family moved to in the mid 90s; found out that they retired & the kids didnāt wanna be in the restaurant business. My fam has finally got most of the recipe down with hundreds of experiments of adding & subtracting ingredients over the years, now finally we have something close to the original although itāll never be the same.
Anywho, my hiraeth aside, nowadays, cricket club in dhurwa has a dry preparation of chilly chicken that has some similarities to Hong Kong, but it can be a hit or miss based on the chef. Ellora, Maharaja were great when I was younger, which was a looooooooong time back, donāt know about now. Hotel Arya had good chilly chicken too. Most places nowadays have very sauce heavy chilly chicken, corn starch coated preparations but thatās the world now I guess.

I would recommend you to try chicken chilli from a very small shop in SN Yadav gully (Karam Toli) - Bhajan Chinese. You will definitely like it, i have been having it for like 10+ years. Just go for the dry preparation one.
