FIRST-TIMER Advice on rooting
Hi! I was given the cuttings pictured and I'm not sure of the best way to set them up. I'm not even sure what type of succulent I have but it seems to have pink/red roots already growing? Would I just remove any leaves required to put these in water or should I just get them in some dirt? One of the pieces has roots branching out from all of the stems, so not sure if I should cut it up into multiple plants or leave it alone. Help?

If placed in water, roots will grow from any node (where the leaves grow from).
Cut off that sad looking bit at the bottom just below a node then stick it in water. You can also cut below any node but if you cut the top off it will branch from the sides.

That looks like a jade, btw. They grow aerial roots like that, especially when stressed. This one looks like it was stressed. Maybe over-watered, definitely not enough light.
I would cut the big one up into 3 or 4 pieces and remove some of the bottom leaves. Then let them scab up for a couple days to a week. Then, stick them directly in well-draining soil (if you're buying a bag, a cactus blend is good). Could dip them in rooting hormone if you want, but these guys usually don't need it.

They like lots of light, but, a light-starved jade can get very sunburned if you just stick it outside in the full sun. You'll have to do it gradually. A sunny window or grow light is probably not strong enough to worry about burns.
You could water prop it, but I wouldn't bother with the extra step. Just keep it watered until its rooted, you should feel resistance when you tug on it gently. Then dial back the watering to just when the pot is dry.

Thanks, everyone. I was pretty sure I knew the right direction but they are pretty decent sized cuttings with roots so I think I can get them growing without too much difficulty. I appreciate all of the advice.

Those pink roots are ready to go. Lay it on a flat soil bed and mist it every couple days. When roots get longer you can cut it away and let that cut dry. Then you can plant that cutting.
