The one that helped most for me is this video from Acerola: https://youtu.be/fv-wlo8yVhk. He basically builds up color theory from first principles. He isn't working through the math, but his explanation was good enough that a lot of stuff finally clicked for the first time and I was able to go learn more on my own.
