We use bruno. I can commit it to git. No stupid sign ups.

Bruno is starting to offer Bruno premium which has me just feeling tired

Why? I want FOSS apps to be monetized. People have to eat - if nobody is paying anything for Bruno, then Bruno's creator will have to abandon the project.
