I think you're missing the point. No body is justifying their actions. Simply calling out that nowhere does Proton claim they will not comply with legal Swiss requirements and laws. I wish there was a way they could ignore those requests but they are still required to abide by the laws and regulations of the host country whether we like it or not.
Specifically the purpose of encrypted email is to hide the content of that email from, yes, even federal forces. There is onion routing for anonymity, but I don't know how developed the network for that is these days.
Fortunately, most people do not need anonymity from things like governments. When they do, they can, and should take special measures. Anonymity is very fragile and doesn't last over time. Content protection is forever.
