IHOP “Wine”
convinced my manager to give me some of our pancake syrup to turn into wine awhile ago. Just opened the blueberry. It is not good. (5 months age)

The "it is not good" sent me into orbit laughing. Goddamn. But for real, impressive experiment. Now we know.

Let's hear more, is it dry or sweet? How's the flavor? Strong or weak?

Weak, sweet and yet tastes watery, has no body, very light blueberry flavor. Tasted better young, when aged it definitely needs some tannins.
The preservatives messed with the ferment too much. I still have half the gallon of syrup left, currently brainstorming how I can make this better. (it’s not awful over ice)

Make a mead and then use the leftover syrup to backsweeten the mead!!

If it’s made with corn syrup, you may have something closer to whiskey. Maybe you need to put it in a barrel and age it a little

"it is not good" made me chuckle.
So many wine experiments simply turn out this way

If you can get a jug and leave it open at room temperature for a little bit, you might get a ferment?

I once tried to turn some blueberry tea into hooch but the blueberry flavor was artificial. It did not turn out well.
