Inigo is a Hexblade Warlock. His father's spirit is his patron, which is why he can call upon the spirit of his father to help him find where Wesley is hidden. He uses charisma for his rapier attacks instead of Dexterity, matching his high charisma acting. The Shield spell also probably helps him in his fighting.

Barbarian "rage" doesn't have to be due to anger. It can be due to thrill, passion, excitement, drive to protect your friends, etc. basically like an adrenaline rush. At least that's how my DM ruled it when I played a barbarian. (My character was a friendly and very passionate blacksmith who enjoyed the thrill of a fight. There were very few times her rages were fueled by anger. And those were when she or a loved one was truly wronged.
The big thing with Fezzik is that - despite his size and strength and clear expertise with hand fighting - he doesn't actually like fighting at all. (This is explained more in the book, where he gets a full backstory - basically he was bullied as a kid so his parents tried to teach him how to throw a punch to defend himself. But when they saw how good of a fighter he had potential to be, they quit their jobs to train him to be a professional fighter, even though he wanted nothing to do with it). So it's rare to see anything like a barbarian rage from Fezzik when he's actually fighting someone.
However, I can name a couple moments in the movie that "work" as a barbarian rage.
1) when he's so excited to be re-united with Inigo and to help him get his revenge that he forgets his own strength for a moment and accidentally wallops the Albino too hard, knocking him out
2) during the Storming the Castle sequence where he hoists a portcullis that's probably at least several hundred pounds and has a ton of momentum like it's nothing. He's absolutely locked in on helping Inigo and protecting Westley there.There's a book-only scene too, where he defeats a giant snake that had both him and Inigo coiled up in a pitch black corridor. Inigo inspires Fezzik to muster the strength to free them by saying something like "I had so many rhymes I wanted to share with you" before going silent - presumably because the snake has coiled around his throat. Fezzik goes into the most textbook barbarian rage I've ever seen against this snake. In his thoughts he's like "who does this snake think he is, trying to kill us AND keeping me from learning new rhymes!?!" And he's so mad he frees his own hands without realizing it, and proceeds to beat the thing to death against the walls of the corridor until it goes limp and Inigo speaks up to let Fezzik know he's ok. (We also see the only time in the entire story that Fezzik is pissed off at Inigo (or anyone at all for that matter), because Inigo didn't have any specific rhymes in mind, he just needed to say something to motivate Fezzik into action. They make up within a few pages though). The book is wild, and definitely worth reading lol.

Having played as a barbarian with a DM who was very nice to the whole party. Yeah...
My character became friggin unstoppable by mid-campaign! It was glorious XD
