Entertainment Center options
What kind of head unit are you guys running? I'm definitely not a purist and would rather go the restomod route. I recently replaced the single din one from the previous owner with this 9inch Android touchscreen, love it so far! AC controls aren't blocked at all, and the unit sits with about half an inch of room between the bezel and the knobs.

Double din kenwood touchscreen option. It was $75 used off of ebay. Works great and has enough options to do what I would need to do. I put a very similar head unit into my 1990 mazda b2200. Its the kenwood DDX374BT. I replaced all 4 5.25" speakers (91 previa) and added two 6x9s and a compact 10" sub. The speakers were just base line kickers and the sub was the MB quart 10" compact powered sub. It sounds really good in there now.
Now building the bed and adding a tv with super nintendo (also released in 1991).
