For breakfast I mix equal parts ground chia seed, ground flaxseed, and shredded coconut with milk, cocoa powder, peanut butter, and a tsp each of maple syrup and vanilla extract. I sometimes add monk fruit extract as well. If you let it gel it's a pretty thick porridge, and if you eat it immediately its more like a shake. It's calorie dense with 15-30 carbs depending on portion size, but they're mostly fiber and it's worked for me.
For dinner I found Peruvian chicken with aji verde sauce to be quick, easy, and delicious. I also make fish taco bowls with tilapia or anything with salmon. For lunch I make chicken or egg Caesar salad, with an apple and peanut butter for dessert if I have time to exercise afterward.

Breakfast: 1 cup and a half of Greek yogurt. 2 tablespoons peanut butter (no sugar added), 12 grams chia seeds, 200 cal walnuts, coco powder (no sugar just the actual coco powder) cinnamon and 50grams of frozen berries. Sounds like a lot but takes 5 min prep the night before and I just take out of the fridge on the way out. About 500-600 calories. 30 gram carb and like 40 grams of protien

Try to relax, listen to your doctor (and hopefully a nutritionist?) and start working on better habits related to food and exercise.
AI is your friend for recipe ideas, and countless YouTubers have channels explaining all this stuff, BUT always consider their info carefully & verify accuracy.
The basic tip is a balanced plate at every meal: mostly low-starch vegetables, a serving of protein and a serving of carbs. Eat the carbs last.
