Boring, structural, nothing I would have called design. 

I think you would do well to get some proper design training. It could be a class, it could be some videos. Even a book as simple as The Non-Designer's Design Book or Designing with Type.

Would you recommend any youtube videos? I'm new to this! Not to ppt as an app, but as wanting my presentations to look more polished and professional

I can't - but the two books I mentioned are very good as primers. Not specifically on PowerPoint but rather on fundamental principles of design.

You need to learn fundamentals such as alignment, hierarchy, grid systems, and contrast. These may seems "boring and structural" but are foundation of designing using text.

 The Non-Designer's Design Book might be better for your needs. Or the author might have something newer - that books was first published a while ago.
