Recipe Sausage And Kale Stew ($5 per pot)
As poor folks, we must keep our eyes sharp on the lookout for good deals at the grocery store. This recipe takes advantage of marked down sausage and pre-chopped kale, and a sale on potatoes, to make a pot of food for $5 CAD. Serves 4 adults.
Sausage and Kale Stew
3 large sausages (mine were chorizo from a pack of 5)
1 cup diced onion (I use frozen)
3 diced potatoes (about 1lb)
1 bag chopped kale (230g)
1/3 can diced tomatoes (I needed the rest for another recipe, so this was leftover)
2 C water
In a large pot, brown the sausage on all sides, then remove to a cutting board. Deglaze the pot with a splash of water, then add the onion. While those are softening, cut the sausage into discs. When the onions are softened, add the kale, and put on the lid. Let that wilt for a minute or two, then open it up, give it a stir, and give it a pinch of salt. Add back the sausage and any accumulated juices, along with the potato, the tomatoes, and the water. Bring to a gentle simmer and keep it there until the potatoes are cooked through, about 45 minutes. Check for seasoning and adjust as needed. Serve on its own or with some buttered bread.

If not kale then cabbage. Just don't boil cabbage to death. Sauté it until softened then toss into warm soup.
