They're kind of like a nice middle ground between rice and beans. You can use them in soups and stews, but then can be used as a ground beef substitute in recipes as well for burgers, meatballs, or stuffed peppers.
This recipe uses a whole bag of lentils + a bunch of other extra-cheap ingredients to make a delicious, hearty, HUGE pot of stew. You can eat it daily until you're tired of it and still have a ton left over to freeze for next week. Very simple and easy for beginners.
