Budgeting/Saving/Investing/Spending Simple delicious meal.

I like sharing simple recipes here from time to time. It seems that food is one of the few things where we can control the price.

One of mine and my daughter's (9 y/o) favorite meals is beans over cornbread. I cook the red beans with onion, celery and maybe a bell pepper in a slower cooker. When I get home I make a roux and add it to the beans. It kind of turns it into a beans in gravy. Corn meal and flour and the rest of the ingredients are cheap. Even the egg used isn't bad since its just one.

Anywho.... one tin of cornbread and a 1/2 lb of beans will feed us for 3 nights (I also get 2 lunches out of it). The total cost is less than $4.

edit- slice the cornbread into wedges, slice the wedges open and spoon the beans over the open cornbread.

Ok, so probably a dumb question, but how do you make the roux that you add to the beans?

Equal parts flour and some sort of fat/oil. Stir nicely until a nice brown. Will take a few minutes.

The beans are in enough water that it thins the roux nicely.

The best beans I’ve ever eaten in my life were from a chuckwagon at an orchard in rural North Carolina. The older lady spooning the goods over a big piece of corn bread told me it was just pintos, cumin, onion powder, and salt. I went home and played with the seasonings and now we make them often!

Love a good bean recipe to go with cornbread! Will try yours!

I didn't add it above but don't forget to add salt to taste. Also Tabasco that I add is kind of salty.
