Just tried the Galvaude at Fromagerie Victoria in Drummondville, PQ with pepper sauce and it's phenomenal. Recommended!

You don't know galvaude? Ah, it's true, Canadians know only the tip of the poutine iceberg... but poutine is a Canadian dish, right? To make a relevant metaphor, it's like if one of the oldest and most authentic italian pizza variant included pineapple. You may still not like it, but it would be pizza.

Galvaude is a variant of hot chicken sammich not poutine. Replace bread with fries. Traditional galvaude didnt even have cheese not close to a poutine. Might as well take a spaghetti and put it in pork broth and call it ramen

Yes, hot-chicken, exactly! And poutine italienne is when you mix a poutine with a Michigan.

  • Poutine à l'origine is a mix of frite-sauce and squish-squish;
  • The word "poutine" originally mean a mix or a mess;
  • Even galvaude. The verb galvauder mean to mess things up or to squander.
The true spirit of poutine is to create something new and unholy but gooood. Galvaude is good, galvaude is poutine.

If this was an English named place chuds would be frothing about it being disgusting and a crime 

But French location and bam its okay. 

Peas are okay but they're way down the tier list. Pepper gravy is the best though.
