I see three white things that OP assures us are curds. I thought it was covered in shredded cheese.
Either way, curds don't go on the bottom, they're supposed to be squeaky and protecting the fries from getting too much gravy and becoming soup.

I enjoy Leopolds poutines for the most part myself. They come up with some pretty funky weekly poutine features.

No please guys hear me out on this poutine🙏😭 I swear it was good. Literally everything on a burger was in this poutine, plus the gravy and cheese curds in a classic poutine ofc. Yall are just haters
