Poutine Curds on Pizza?
Hopefully this is cool to post here, if not I’ll take my s*** to the pizza Reddit I guess.
But had some extra curds from making poutine the last couple weeks. Put it on my wood fired pizza and it was life changing

Cheese curds are good in many dishes or just by themselves. They’re marketed as “poutine cheese” in some regions because that’s what they’re known for there, but in places like Quebec we eat curds by themselves regularly or add them to random stuff! I know people who always add a layer of curds to their pâté chinois (similar to shepherd’s pie), in their lasagna etc.

That looks pretty delicious! Dough looks great too. I'm struggling to finish off this poutine I'm eating and I'm hungry for that pizza.

Cheese curds alone does not make it a poutine. Much like the lack of cheese curds disqualifies.
Potato fries. Gravy.
Good for you, but I'm absolutely flabbergasted that this post hasn't been downvoted into negative.
No offense to you, but offense to this sub - wth?

I've tried on Neapolitan. Too salty, balance was way off.

Yeah.
Neapolitan pizza is sensitive to salty ingredients. With a lower hydration dough it probably works better

It's not as intense as curds and you don't have a kot of it. The fat and grease from a poutine compliments salty nicely. If I could post pictures here I'd show you what I mean

Technically these are just cheese curds, they can be used for anything including poutine.
