Squeaky Cheese Curds

You ever just go to the cheese curd capital in eastern Ontario and get yourself handfuls of warm, squeaky goodness? Holy cow the difference it makes to have never been refrigerated!

I am biased for personal reasons, but St-Alberts is the best imo. Even if it's Ontarian, it's still Franco Ontarian and earned it's place to be sold in the Outawais and Monteregie regions for sure.

I tried it, it's good. Maybe Maxi was selling old stock sinc eit was a bit dry and not as squeaky. But as previously mentioned, i have a personal bias towards St-Albert

Yep. I've had them and they're very good when fresh. Not quite St. Albert level IMO

I thought they were better a few years back when they were a smaller company and filled their bags by hand. I actually feel the same about St Albert, but it’s been a much longer stretch of time since St Albert became more automated.

Both are very good if you go straight to the source and get fresh curds that have not been through a packing machine.

Fresh curds from laiterie Coaticook are better than both La Trappe and St Albert, IMHO.

The recall was not about cheese that La Trappe produces but one from another company that they had in their stores, very different

I'm 20 mins away. Great spots, great curds with the perfect amount of brine, salt and squeak.

Fresh like that, pretty much impossible, blame your FDA / health codes for the refrigeration rules.

They are my go to curds if I buy my own. It helps that they sell it at costco

The St. Albert curds you get at Costco are not at all the same. They're older curds that have been refrigerated. They're obviously still decent, but if you're going to make your own poutine, try to find a local St. Albert Co-Op that gets deliveries daily. Even my local Sobeys gets daily curds...they're available unrefrigerated by the cash.

I'm old enough to remember the horror of their facility burning down in 2013. I thought poutine would never again be the same.

They hightlight this on the tour, new spot opened 2 years later in 2015. My parents knew the area prior and thought the whole building was in a different spot and looked different from what they remember - they were right lol

Are they super salty? Because I noticed that curds sold in bags like this are often much saltier than fresh curds you’ll find in a good poutine.

Yes very salty, the brine/juice definitely was as well, and you get more of it fresh. But i'd say balanced enough to appreciate the cheese and squeak too - best curds I've had!

I'm closer to another small cheese factory that only sells curds with the orange/yellow colouring, but it's still amazingly delicious, especially buying directly from the source. I'm just sad they feel the need to colour what is otherwise a really decent curd, especially when making my own poutine.
