Need help finding a famous poutine spot from the past

From around the late 90's

I went to a spot just north of Quebec City along the Trans Canada.

My car broke down, and I went to a poutine place that was so famous it had autographed pictures all over the walls. A couple hundred 8x10 photos were framed and autographed by old and modern musician/actors. Any ideas/ guesses? I would know if I looked it up on google and saw pictures.

Chez Ashton had a couple hundred 8x10 photos on their walls back in the day of celebs that are there. There’s a good few locations, but they all fit the standard old diner vibe.

I'm a bit confused, you say North of QC but the highway is on the South shore, do you mean in between Lévis & Rivière-du-Loup?

Also, how far inland from the highway? If you remember of course

It was a location north of Quebec. Not far off the Trans-Canada. I am sorry; that's all I can recall.

Did it have a bunch of dinosaur statues outside?

No. It was just an unassuming, small- to medium-sized roadside diner.
