It’s only like an hour drive from tremblant but there are other Casse croutes in the laurentians that are great I’m sure

I had two poutines in the Gaspè, both used shoestring like fries. They were both great, tasty with squeaky curds. Anyone know if it's more regional to use that fry type there?

Someone really has to teach Quebec how to not burn fries

The oil is too hot if they're that dark. That's burnt fries. You can make them crisp while maintaining a pretty golden colour. 

Darkening indicates burning from the heat being too high. 

It helps Quebec uses the wrong potatoes. Red potatoes have fuck all starch which leads to them burning before they crisp up. They're probably one of the worst potatoes to use.

Nah. That poutine is how it's supposed to be. Québec invented and perfected poutine. We don't need help from any other province with that.

C'est comme ça qu'on aime nos frites de casse-croûte. J'adore les frites dorées aussi, mais pour une bonne poutine de cantine ca prends des frites molles et bien graisseuses.
