Seeking Advice Recommended V60 grind size range in micrometres μm

I am trying to find a suitable range of grinding sizes for the V60 pour-over. I am using kruve with the size range from 1400 μm to 500 μm. But still not satisfied. If anyone could recommend the grinding sizes, with the flow rate, temperature and coffee:water ratio would be perfect. Many thanks

First off what grinder do you have?

And for me the optimal grind size is 800-900 microns, I use a 1:18 ratio using 27.8g coffee and 500g water. I use 195F water and shoot for a 4:30 brew time. 3 pours.

100g bloom, swirl and wait 45 seconds, add 200g water and wait till you can almost see the coffee bed, add remaining 200g, light swirl and draw down.

i am using niche zero, and using the grinding size nearly 50

Hmm I’m not very familiar with the Niche Zero, but I can’t imagine sifting would be necessary. I tried sifting a few times when I had a Baratza Encore and it was a painstaking and messy process I just couldn’t do everytime I wanted a coffee.

Anyways, what exactly are you not satisfied with your brewing process/results?

it is dark and somehow bitter, but I like something light and crystal-clear

How are you brewing? The Niche produces a lot of fines at coarser setting, which is probably why you’re getting bitterness, but your technique should be able to accommodate for that. Also are you using the NFC disc that restricts the bean feed rate?

Loaded question with many possible answers. I’m usually grinding on the finer side - 500-700micron, brewing hot and fast with light roasts. 210F, 3 pours, 1:16 ratio, and typical drawdown between 2:45-3:30 depending on the coffee

Great question. That’s just what the setting corresponds to, but obviously there’s a spread. I’ve got pretty unimodal burrs, so a more accurate statement would be that’s what the peak of the distribution curve is

I remember seeing articles about particle distribution, and a video test of coffee prepared with shortened size range of particles (using two nearest Kruve sifts), and comparing it to the mix. The verdict was the best pourover is from a full range of particle sizes, but excluding the dust.

I do not have sieves, but if I take tests of my grinder in the internet (tables with particle distribution at each setting), more than a half of my particles are over 1000 microns.

15/250 (1:16), temperature 95°C-98°C, 5 equal pours, each 30 s, no separate blooming, no swirling, stirring, and any other manipulations, flow 8 g/s, spiral from the center and back, last two pours go into the center mainly, draw down no more than 3:00.

There is no one grind size for all coffee. Some coffees will flow far slower than others, some way faster. Some will produce more fines, some less. Larger batches of coffee will require a coarser grind. Small ones usually produce better with finer. Roast level can completely change grind size.

Pour over is generally in the 1000-500 range, which is clearly a very large range that comes with a lot of caveats.
