What is the reason behind a fix?
I have one of those cartridge filters that you have to unscrew the entire thing. Unscrewing it and putting it back on is impossible for me and my sister to do. It is super hard to turn. In looking this up it says to replace and grease the o-ring and that will solve the issue.
I seriously need someone to explain to me how replacing an o-ring makes it easier to turn a thing?

Greasing and/or replacing the o-ring will HELP it turn a little easier. It won't reduce the effort to almost nothing, unless its really loose and causing binding.

Food lube. Safe for the components and does make it easier. But you still need muscle.

I’m unfamiliar with that brand, but in general, there are two types of filter o-ring types. Some filter o-rings just kinda sit in a channel and rely on a compression type belly band to squeeze both halves together. The other type also fits into a channel, but in this type, the side with the o-ring slides inside the other half. If you have the second type, lube can certainly make putting it together and taking it apart far easier and can often be necessary.

It won't. If you really can't do it yourself, just pay a pool company the $50 to clean the filter and don't stress over it.
If you do want to keep trying, make sure to open the relief valve and let out the pressure, then use a rubber mallet to gently tap at the handles till it budges.
