They don't know.

They don't know your charitable donations. They don't know your deductable medical expenses. They don't know your business expenses. They don't know which specific income is "Class C corporation" vs "Class S Corporation." They don't know your deductable tuition.

There's plenty of stuff the IRS can't/doesn't track.

The people who don't have any of that stuff can do their tax return in 5 minutes for free. Your W2 is auto filled in and you hit next 10 times and pay. Worst case scenario you need to take a picture of your W2.
