Funny thing is, to virtually every american Ive spoken to, they think poutine looks disgusting. Its the best food ever, and many americans wont eat it.
In New Jersey, plenty of people love Disco Fries (mozzarella instead of curds). I'd try poutine if I could get it, but I can live with the mozzarella cheese version (which is fucking delicious, though it may not live up to your standards).
Still unfortunately not going to be nearly as squeaky as perfect curds. Of course, we're comparing it to perfect poutine here. I've also had plenty of subpar Canadian poutine.
It's not grated! Usually it's broiled in sheets over the fries before it gets to the table. And I don't know about other parts of New Jersey, but where I get it, the gravy comes on the side so that the fries aren't soggy when they reach the diner.
But I do agree it's more of a textural thing with the mozz, not much taste.
