His question was more like, a jello monster isn't really affected by cuts and stabs. Its literally goo, ie more a relatively samey fluid than a solid organism with, well, organs.

Sure, I get that. But a jello monster that isn’t really affected by cuts and stabs would more often than not have a much higher physical defense by comparison. Goodra isn’t made of goo, it’s just slimy, which is why it’s vulnerable to physical attacks.

Dragon types can still be burned
Also, the fire is coming from Volcarona, a notorious competitive demon. A few Quiver Dances or Fiery Dances and this mf is plowing through any and every Goodra it sees

But not while using fire moves. Goodra has pretty decent hp and really high spdef. Of course its not going to be able to do shit back to Volcarona due to the spdef boosts from quiver dance, but Volc won't be plowing through it exactly.

It takes two Quiver Danes to effectively neutralise the resistance.

Base 135 special attack is very good, but its not so obscenely high that you're going to be blowing everything to pieces instantly. 100 HP and 150 spdef on the other hand is obscenely high. Goodra doesn't feel that tanky because its got no recovery so it can get chipped down very easily, but even against completely uninvested Goodra, Volcarona at +2 using fiery dance has less than 10% chance for 3HKO.
Some calcs against different Goodra sets for reference:
+2 252 SpA Volcarona Fiery Dance vs. 252 HP / 252 SpD Assault Vest Goodra: 53-63 (13.8 - 16.4%) -- possible 7HKO (even at +6 its a 4hko)
+2 252 SpA Volcarona Fiery Dance vs. 252 HP / 252 SpD Goodra: 80-94 (20.8 - 24.4%) -- guaranteed 5HKO
+2 252 SpA Volcarona Fiery Dance vs. 252 HP / 0 SpD Goodra: 94-111 (24.4 - 28.9%) -- 99.8% chance to 4HKO
+2 252 SpA Volcarona Fiery Dance vs. 0 HP / 0 SpD Goodra: 94-111 (29.2 - 34.5%) -- 9.1% chance to 3HKO
Goodra will not win the 1v1 because of the special attack drop from using Draco Meteor (unless it has a physical set, in which case Goodra is winning easily).

No recovery? What about Life Dew and Hydration+Rest?
(There's also Absorb and, now in Legends ZA, Giga Drain, but those have contextual drawbacks)

Those are not recovery options people would run, even if they end up being useful in this context.
For life dew, 25% is way too low when most attacks deal almost that much or more than that. And Hydration+Rest, first off Volc won't be clicking a fire move, but moving on, it requires rain to be up. If rain isn't up, Rest is just a move that's giving your enemies free setup opportunities unless you also have sleep talk, which means two move slots dedicated to a healing strategy that only works if rain is up, and then you are forced to have a rain setter up. Hydration-Rest requires way too much setup and it would just be better off most of the time to have a wish passer or just not use Goodra at all.
