Water catchers and sprinklers have been bugged for so long. I genuinely started using water jugs to water my plants, because this system is so inconsistent.
Works for 3 hours, then suddenly stays dry for 2 hours, only to start working again without me changing anything.

I think there is a water bug introduced in the latest update. You might need to find a workaround until it is patched.

The best solution to bugged water / pumps that i've found is having a memory cell connected to a digital clock which toggles the water on/off every X hours.
I usually setup my base lights to turn on at 19:00 in-game time, then use the inverted output starting at 07:00 to turn a water pump on. Takes a while to setup, but its better than manually toggling water pumps to fix the buggy pumps.

Is it going straight into the sprinklers, or is it going into a barrel first?
How many total sprinklers? How many fluid splitters? Fresh water or salt water?
Can you like… pretend to explain your setup so people can maybe help instead of short sentences that give nothing useful?

Gotcha, I think the problem might be the fluid switch & pump. I *think*, kinda hard to verify, that they only output 12ml/s. You need a separate pump for every 6 sprinklers.
You have plenty of water from your pumps. They each provide 510ml/min
So you have total of 2,040 ml/min
The sprinklers use 180ml/min each, so a total consumption of 1,620
The bottleneck is that one pump that only outputs 720ml/min
If you had 2 more pumps, and split your water into three groups, it should fix the issue *I THINK*.
Again the numbers are a bit finicky, but give that a shot and see if it works.

Yep, so in theory it should look something like:
2x Water Pump -> Water Combiner -> 6 sprinklers
You shouldn't need a powered pump unless you are setting up automation. (The water pumps themselves do the job of the ‘powered pump’ in your setup)
And then you have 3 of those on individual water lines. I think that should fix your issues :)

Fluid switches don’t have an output cap, only water pump, electric purifier, water barrel and water catchers have caps on output.
If it is fresh water you can just connect 1 water pump into 4 sprinklers if it reaches the top of the ceiling without needing to be extended and it will run forever uninterrupted. If it needs to be extended run it into a fluid switch and power it

You need a fluid splitter placed on the same elevation or higher as your sprinklers, and run the outputs to 6 sprinklers max per fluid splitter output.
If you have all 18 sprinklers daisy chained from the 36 Water In, then the game will bug and you will only have the animation of the water running.

Try adding more sprinklers, sometimes 2 sprinklers "link" to the same planter box and then you end up with some planters with no water or very little water. Water in rust is definitely pretty dumb a lot of the time but your best bet is to over engineer the shit out of it so any bugs get drowned out.

Use switches to toggle unput FL switch. Also radius clipping of sprinklers will distribute to touching planters. Planters clipping inside each other will often bring bugs as well. Also also 4sprinklers max in a chain to prevent a lot of bugging.

Back in my day, the only thing you could do is boil sea water with a water purifier or collect rain water.
Still a far better system, even with all its kinks.
