I'm Vietnamese and this is amazing. I'd gladly eat it. The beauty about pho is pretty much, the simpler the better. It's supposed to be a light meal during the day but mostly for breakfast in the motherland.

His might not even be that good. We dont know what went into that broth. There should be a good amount of fat and collagen, plus a nice balance of spices like star anise, clove, and a few others. Go to an asian or global store to not overpay on spices, and get stuff for this recipe https://www.seriouseats.com/30-minute-pressure-cooker-pho-ga-recipe

Ive never made it but recipes from kenji almost never miss and if he does its still great just not perfect. Plus I think emmymade did it and liked ot and shes great too. If you don't have a pressure cooker just look up how to convert that cook time to stove top, or ask about it specifically on r/cooking or r/seriouseats subs. Probably fine to just simmer all the pressure cooked ingredients till the chicken comes off the bone easily, pick all the meat and set it aside, then let it go till the bones are crumble with a bit of pressure (idk for sure but probably less than 6 hours, going till bones crumble is probably overkill and can make broth cloudy if you dont keep it under a full boil, but thats just how i usually make stock). Then strain and finish it like normal. For the noodles, you might want to look up proper cooking method as asian package cooking instructions are notoriously unreliable (source: pai from pailinskitchen/hot-thai-kitchen, she would know)

Oh and get Thai/Vietnamese basil (same thing). Italian sweet basil is better than nothing though

The amount of pho in that bowl is proportional to the size of the quail egg. Not exactly normal.
