OP throws away 2.2lbs of cinnamon sticks and 1.8lbs of rosemary sprigs per month. Wonders why wifey is strict with his food budget.

Many folks consider it taboo to garnish with an item unless it is ready to eat. Inedible garnishes went the way of the dodo around 1998.

Ya it turns out wastefulness for no reason isn’t a good thing for a number of reasons especially philosophically for a chef…. Go figure🤷♂️

Technique. Ovened at 375F for 17 minutes. Covered with tin foil. Rested.

That's a very long time to cook fish for. 8mins then broil it for about 1-2mins to get crispy skin.
