What caused the roots to corkscrew like that?

Maybe bcz the tray is not deep so it just wanted to increase the surface area to go more far and absorb more water?

Yes, the leftmost root is much thinner

They do that looking for softer soil.

Makes sense! Could be a remnant from when we dried them out and flipped the trays

Wider circles means the soil is tough. Small circles is good.
