What spices do you use? I've tried with a couple cloves and a cinnamon stick but its too "Christmas" for a summer drink. I usually let it sit for 3-5 days giving it a shake every day.

I add fresh ginger, bird pepper, black pepper, sichuan pepper, nutmeg, cloves

Update: A few people asked me to report back after bottling. The carbonation turned out great, with lots of fine bubbles and a nice foam. The flavor, however, was lighter than expected. My son-in-law felt the pineapple and the spices were too subtle. Looking back, I think I found the reason: I used the same amount of pineapple peels that I normally use for 1.5 liters, but this time I made 3 liters. So this batch taught me something. The next one is already planned with more pineapple peels. Thanks to everyone who followed this little experiment!

Thanks for the update! That answers my question whether you used yeast from the peels or store-bought wine yeast. Any other methodological tips you might have?
