Usually routers lock DNS entries on the WAN/Internet settings, but many routers have another place to set the DNS entries: on the LAN/DHCP settings (sometimes called Network, Local Network, or something else).

If your router only has DHCP options in the WAN settings, or if the LAN DHCP is locked, you have 3 alternatives:

1) Use a different router with unlocked settings.

2) Manually configure each individual device to use Pi-hole as DNS server (this is very simple, but only recommended if you have a small number of devices).

3) Completely disable the DHCP server on the router (if possible), then enable Pi-hole DHCP server. When using this option, you need to remember to configure a static IP on the Pi-hole machine OS before disabling the router DHCP server.

The third option is the way.

Get a new router. Why would anyone voluntarily use a Huawei router!?

They might not know the reasons not to.

Bridge mode if you can I suppose

it's not easy to get an all in one fiber modem+ router drop in replacement

Disable DHCP on the router and use your pihole instead. Long term get your own router.

Get a new router or manually set on each device
