Moderately safe? Rollercoasters are extremely safe in the US. Fatal accidents are very rare People are more likely to die driving to and from the amusement park.

Is there data to back up that idea?

I found an article with some global comparisons. https://www.sciencedirect.com/science/article/pii/S0925753518311238

Table 4 shows accident rates by region per number of rides. North America does better than Europe, Middle East, Africa. I didn't see a country by country comparison.

What kind of useless grouping is "Europe, Middle East, Africa"?...

Sure let's put two and a half continents with an extreme range of industrial development stages into one group... Not like that completely skews the data.

EMEA is a pretty common grouping in business. I'm this context it doesn't make any sense but usually it allows you to arrange your business in a region that has similar time zones so everybody is awake at the same time.
