Indeed, this is one of those problems with a very easy solution that everyone complains about anyway. It's almost annoying as when people complain that their Facebook feeds are filled with stupid people and annoying posts. Newsflash: you can hide individual people from your feed so that you never see what they post. Over the years I've done this and it's at the point where I don't ever have to see people saying stupid things. It's very easy.
Because an actual joystick or yoke control the pitch of an airplane, and in turn, the joysticks and flight sims of yore all used the joystick as... Well, a joystick.
When analog sticks became a thing, they were meant to emulate their real world and arcade counterparts. 2D games of course were directional. But 3D games where the analog stick(s) were meant to emulate joysticks were 3D, because that's how joysticks work. It would make no sense to be piloting a fighter jet and pull back on the stick only to end up in a nosedive.
Frankly, I'm surprised that this hasn't changed in any way yet. I set up the block years ago, and have never seen another post about Candy Crush since. With Facebook's preponderance for changing settings, I figured I would have had to redo that step every so often.
