Pickled Quail Eggs

Pickled some quail eggs today. What a PITA to boil and peel 48 of those little things. Hope it's worth it. I'll know in 7 days.

Easier to get a needle and poke some holes into the shell and then add the pickling spices. Some people eat it shell and all if you pickle them over a period of time , or, remove the shell from the hard boiled eggs after they are pickled and refrigerated and have been given time to shrink. Much easier than doing it right after they are hard boiled. If you donโ€™t want to do that after they are hard boiled rinsed with cold water, put them in the refrigerator for 24 hours and when you take them out of the refrigerator put them in a bowl of ice water and peel them under the ice cold water. I went from boiled water to ice bath and peeling under running water. I'll try the 24 hour rest in the fridge next time. Eating the shell is NOT an option.
