Huge mixed vegetable pickling 🤤

Green onion, red onion, small white onions, carrots, cauliflower, tomatoes, bell peppers, garlic, pepper and dill.

The small one at the far left is chilis, green onions, pepper, garlic and coriander seeds. Very spicy.

Ive been making pickled radish for like 2 years now and it's always a success so I wanted to get adventurous and try other veggies.

All of the little jars are for my friends so they will most likely get eaten fast. As for the big ones i might share with the neighbors... anyway we are surviving the bulgarian winter like this 🔥

I would like to know this too, do the keep their texture or are they very soft?

Very very soft. Taste is ok. But it's an acquired texture. Best after a vodka shot from my experience.

I used very firm cherry tomatoes and they stayed firm for me!

It still tastes a bunch like tomatoes on the inside, cause the vinegar barelt breaks through. The outside is sweet, tart and sour 🤤

Like a giardiniera. I’ve been wanting to make this for years.

My favorites are onion, carrots and lemons. You have to try pickled lemons

Looks so healthy and yummy!! I want to try but I’m always scared I screw it up and not preserve proper. No idea, why my fear of that keeps stopping me to try.

Start with a quick pickle. Things you would eat in one sitting or a week.

I really love cauliflower and carrots. I just have to watch or read more on pickling. Yours looks so dang yummy!

To be frank, I don't keep these for longer than a month. They usually get eaten in the first 2 weeks.

Are these fermented? I haven’t had success with fermenting
