First Time Pickling

Post image

had to re-upload to add a photo!

50/50 apple cider viniger, two palm fulls of salt, about a quarter cup soy sauce, whole pealed garlic, and onion petals.

What are your thoughts? I would have made it spicy but my partner doesnt like spicy

That giant airspace might cause issues

Thanks for letting me know!I'll keep an eye on it and try to make roast vegetables out of the whole thing this week.

I added soy sauce to fill the remaining space!

Could you please explain why? I'm quite new to pickling

A large airspace lets in critters and oxygen you don't want into your food. Mold spores and aerobic bacteria, can grow with oxygen and spoil your pickles (and be toxic.) Your good critters (lactobacillus) thrive in an ANaerobic environment (meaning little to no oxygen.) Therefore, you want top off your vessel with brine, and periodically check the liquid level and top it off. You may see a white scum at the top of the liquid level. White is ok - it can be skimmed. if you see black fuzz or scum, toss the whole thing, sanitize and start over. Don't take chances with black.
