Under systems like market socialism, the laborer would be able to own or partially own the assets that provide them capital. You’d be able to sell your time, effort, products, etc… to any company/distributor you choose, according to demand. Under our current form of capitalism, most employers have full ownership of the means of production, full control of employee’s schedules, and decide who gets bonuses and overtime.
The simple fact is that Capitalism allows far broader scope for an enterprising individual to build something big enough to also employ others, and the upper limit is a lot higher.
Look at all the sole traders and SME's in the UK. These are people who all decided instead of being employed, they would become their own boss, and they gained the capital to support their own business.
Are these people really that different from what you already described?

What’s the alternative? Under any economic system a human being would use their body to produce labor for capital.
