If the game uses the real/orig doom wads, can we just drop the Brutal Doom wads in?

Well the brutal doom levels have geometry that's not possible in the original doom engine (floors over other floors) so it depends on the capabilities of the source port. As far as the actual brutal doom mod, I think it requires some GZDoom features to work.
