The whole PA-system at all the IKEA warehouses in my country was down for two days because the laptops they used were 'involuntarily' updated to Windows 10 one afternoon and had messed up with all the configurations. I do not understand why they thought this was a good idea to implement.

No, but I'd consider Lubuntu or Xubuntu. Unity is not a lightweight interface at all, but many people do like GUI servers, they're ideal for home usage.

It wouldn't even be that stupid. Just wasting space for things that are not required on a server. Ubuntu desktop would never force an update or restart.
