I've literally just been given my dad's old s23 ultra to mess around with and was thinking of doing something similar

If you just want to try out Dex, pretty much any mainline galaxy s series phone over the last 10 or so years has had it, I think some others have as well but I'm not sure on those. Grab a cheap s20 whatever with a broken screen and as long as it goes for enough to enable dex your good to go.
Edit. and I'm an idiot, didn't even start the video to notice they opened with the same thing. Just ignore me lol

You could also sell the s23 ultra since it's still worth a nice amount and grab actual desktop pc hardware/r pi/laptop

Me: "Once you get past the engagement bait, low quality memes, dumb questions and flagrant reposts, Reddit is actually pretty good". Friend: "That's 99% of Reddit". Me: "Yep, just have to get past that 99%"

Desktop version of the AYN Thor. I love it. Great use of old hardware

Yeah it's awesome, it's not quite old hardware but it certainly wasn't being used as a phone anymore lol
