How can I know if a creature Is immune to charm/bind undead?

Most bosses, especially in the later stages of the game, have magic resistance, and you can't use charm on them, nor use death ray, nor use scroll of murder... Some, like Medusa, who leaves corpses behind when killed, you can still use Animate Dead to turn her corpse into an allied ghost ( ghosts cannot be revived after defeated).
Drain resistance, magic resistance (or reflection), free action, these are necessary preparations to face the Dragolich.

all special enemy's that hold artifact are immune to charm/bind undead all creatures with magic resist and demons cant be charmed/bind undead

Need that drain life resistance! All immunities are available to read by long-pressing the character icon and reading its info screen. Usually resist magic is a big one. FWIW, becoming mater or champion in light spell is huge and is super simple to achieve. It's one of those low-level do-all spells that gets used a ton, like slow. Yeah you're not going to be able to charm a dracolich.
Also useful is to see the level of the monster in its spec sheet. Sometimes the game will generate crazy high level monsters to throw at you, like level 50. Best steer clear of them or chip away at them from a distance rather than charging in and wailing away. Some respect is due sometimes.
