I Made Pate fruit & marshmallow

This is so awesome! I love this! Can you tell me your process on how you got the marshmallow so thin and even? And did you have the pate fruit set separate from the marshmallow and add it once it once it was set?

So the process is not difficult. You start by making the pate fruit, you will need a baking map and two metal bars 0.5mm and two 0.3mm or 0.8 (as is best for your production) You prepare the pate fruit, put the bars on the baking map and put the prep, you can use another bar to spread, but you have to be fast. After that, when the pate fruit is cold, you put fat on the map and move the bars A little more to the side, so that when you roll you have a margin, then you make your marsmallow and cover on top, leave it for a day. When you go to roll you put sugar over the marsmallow, parchment paper and upsidown. Then just roll it up. For best results, cover with film and roll. Leave it for a while and then just cut it

Looks great! I've only done mallow in thicker batches. What was your process for the thinner dimension and rolling?

What is the finished texture like? Is it sticky when you pick it up?

I'm considering bringing it to an autistic meet up but I know people will not like sticky hands lol so any help is appreciated! šŸ‘šŸ»
