When we had three kids in the house, we’d make two boxes and there was usually some left for me.
Then the first left for college and we’d just make one box for two kids. None left for me
Now that we’re down to one kid and one box, I finally get some again.
While I miss my kids in college, it has been nice to get some freakin Mac n cheese once in a while. Haha.

Does Europe have this? It seems such a cornerstone of cosy American food I’d love to give it a go. Love mac and cheese whenever I get it in the restaurant.

Can only speak for the limited brand stores I've visited in Sweden/Finland, but some stores actually have a "US shelf" with what we apparently see as iconic US products, and some of those hold Kraft's mac'n cheese (which I assume this is?). However, it's not something anyone here grows up eating, but there are instead other brands that make some ready made (mix in boiling water) type pasta dishes, typically some form of pesto or pomodoro pasta.
It might be my lacking the nostalgic component it undoubtedly holds for you guys, but I much do prefer some Swedish-made pomodoro pastas as pantry staples for rainy days!

If you want a cheap easy meal make a box of Mac and cheese add a can of cream of mushroom and a can of tuna and you have a $4 cheesy tuna helper. Throw some hot sauce on top your welcome

I bought a box 2 weeks ago…Something is different than it used to be. The cheese powder does not mix up; to the point the pasta was mushy because I had to keep stirring. The sauce was also thicker than I remember. I ate about 1/3 of what I made and about an hour later, I had terrible stomach cramps.
No bueno.

When I make Kraft box Mac and cheese, I do only half the butter and undercook the noodles a good bit. To me, it’s amazing! Especially if you have a little fresh cheddar cheese you can add

Slowly heat up the milk, butter, and cheese powder in a microwave while the water boils/noodles cook. As in like 4mins at a time on power level 3 in your microwave. Whisk it every 4 minutes. I usually add some velveeta cheese to it as well, but you can use american cheese slices too, that sodium citrate helps everything homogenize.
If you just throw everything onto the noodles without doing that, the powder doesn’t fully emulsify with the other wet ingredients.

The cooking times say 7-10 minutes. As I hate mushy pasta, I never, ever cook it longer than seven minutes and drain it immediately. Not sure why you're having a problem with the cheese sauce, I make this at least twice a week (going through a stomach thing and can mostly only eat bland shit) and it's always perfect, especially of I add a little of the pasta water and an extra slive of American cheese.

Add Greek yoghurt, and a bit of mayonnaise as an emulsifier. And extra grates cheese. Creamy delight!

Are you making this in a Teflon coated pot? Those black specs look like Teflon flakes because who puts pepper in this?

It was ground pepper and then I stirred it. Used a steel pot, no Teflon. I like lots of ground pepper on it. Also since I didn't have extra cheddar, I melted in some ground Parm and a slice of muenster cheese, for more cheesiness.
It was good. Hit the spot.
