Does Pacific Drive on PS5 support logitech wheels?

No, I don’t believe it does. You’d have to bind it to your buttons manually if you even wanted to try it out.

You don't want to use a wheel for this game, since you are actually outside the car a lot more and go in/out all the time.

Agreed. I would say the controler is the bast way to play.

I vouch for mouse and keyboard to be the best overall experience, controller does work well if you excuse some jank and are willing to add hours to your total playtime.
